Los canelones del rustido son un plato típico de la cocina catalana, en el que solían recuperar toda la carne que quedaba de las comidas de Navidad, por eso era el plato de San Esteban.
La comida típica de Navidad en Catalunya era la escudella y el pollo de corral rustido, en la escudella catalana se incluía mucha carne; de pollo, de cerdo, de ternera e incluso pelota de carne picada.
Por esa razón los canelones resultan ser un aprovechamiento de toda la carne que nos ha sobrado del día anterior.

  1. Separamos la carne que tenemos, si se trata de carne cocida la desmenuzamos quitando todas las impurezas y los huesos para poder picarla de una forma uniforme.
  2. La carne del rustido, la deshuesamos y la picamos. Mezclamos todas las carnes y añadimos el paté necesario para que nos quede una masa bastante uniforme.
  3. Para la bechamel, ponemos la mantequilla en una sartén y cuando esté disuelta añadimos la harina y la vamos removiendo con unas varillas hasta formar un roux, a continuación añadimos la leche y seguimos removiendo hasta conseguir el espesor que deseamos, añadimos un poco de nuez moscada y pimienta.
  4. Las placas de canelones las hidrataremos en agua caliente durante unos diez minutos, (deberíamos seguir las instrucciones del fabricante) las ponemos sobre un paño de cocina para poner el relleno y las vamos enrollando.
  5. Disponemos todos los canelones en una bandeja para horno y los bañamos con la bechamel, lo cubrimos todo con queso rallado y lo llevamos al horno unos diez minutos y luego los dejamos gratinar, cuando los veamos a nuestro gusto los retiramos y listo ya tenemos unos excelentes canelones.
